Chicken Noodle Soup

Who doesn’t love a delicious chicken noodle soup recipe?! I love to make this soup anytime of the year, but especially winter of course. My kids are huge fans of it too! We like it served with crackers, butter bread, or biscuits! (Homemade buttermilk biscuits are the best- I’ll work on adding that recipe too for anyone who is interested.)

I normally cook some chicken breasts or thighs for this but you could also buy a rotisserie chicken at the store to save some cooking time. Here is what you’ll need:

Ingredients:

  • 2 Chicken breasts or 3-4 thighs ( or rotisserie chicken ) Shredded/chopped up
  • 2 tablespoons butter or olive oil
  • 1/2 chopped onion
  • 3 medium potatoes – diced
  • 2 whole carrots – sliced
  • 2 1/2 2lb. containers of chicken broth
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon garlic salt
  • fresh or dried parsley
  • 1/2 a box of your favorite noodle

Instructions:

  1. Sautée the chopped onions in a large pot with the butter/olive oil on medium heat. Then add the carrots to it and cook for a few more minutes.
  2. Add the potatoes, broth, seasonings and herbs. Cook until carrots and potatoes are starting to get tender but not completely soft.
  3. Stir in the noodles and cook on medium/low for about 10 minutes or until noodles are soft.
