Apple Crumb Muffins

Happy November!! I wanted share a yummy fall recipe with you. I LOVE baking and my oldest daughter loves to help! This past weekend we decided to make apple crumb muffins. The recipe is a little different than most that you might find- but it is SO delicious! Here it is:

Crumb Topping:

  • 5 Tbsp butter-melted
  • 2/3 cup of flour
  • 1/4 cup of brown sugar
  • 2 Tbsp sugar
  • 1 tsp of cinnamon

Muffins:

  • 2 cups of flour
  • 1 tsp of baking powder
  • 1/2 tsp salt
  • 1 tsp of cinnamon
  • 1/4 tsp of ground ginger
  • 1/2 cup of vegetable oil
  • 1 cup of sugar
  • 1/2 cup of applesauce
  • 1-1/2 tsp vanilla
  • 2 small apples- peeled and chopped

Glaze:

  • 1/2 cup of powdered sugar
  • 1-1/2 Tbsp of almond milk
  • 1/2 tsp vanilla

Instructions

For the crumb topping:

Whisk together the flour, sugar, brown sugar, and cinnamon. Stir in the melted butter, then mix with hands to form crumbs.

For the muffins:

Preheat the oven to 425 degrees. Line a muffin tin with paper liners-this recipe made about 20 muffins.

In a large bowl, mix together the flour, baking powder, salt, cinnamon, ginger, and nutmeg. Set the bowl aside.

Next, mix together the oil and sugar. Add the applesauce and vanilla and mix well. Now add the chopped apples to the flour mixture and add to the oil/sugar mixture, stirring with a spatula until combined- do not over mix. Use a spoon to divide the batter between the muffin cups, then add some of the crumb topping onto the batter.

Bake at 425 for 5 minutes, then turn the temperature down to 350 and bake for 10 more minutes or until a tooth pick or cake tester inserted in the center of the muffin comes out clean. Remove from the oven and let cool.

For the glaze:

Whisk together the powdered sugar, almond milk, and vanilla until smooth. Drizzle the glaze over these delicious muffins and enjoy! I hope you like this recipe as much as I do!
